Perfect Scrambled Eggs

​I love scrambled eggs. There is nothing better than delicious scrambled eggs served on thick toast. However, I know of no other recipe that is so simple yet so often destroyed. Here is my perfect and hearty scrambled eggs.

Tip One:

The title is the key, scrambled eggs, not mixture eggs! When you begin mixing, your ingredients do not over mix your eggs. Remember that mixing will continue on the pan so very minimal blending of ingredients is needed initially.

Tip Two:

Don’t over cook. Eggs are frequently overcooked. Cook them over a low heat and just as it solidifies take it off the heat. The eggs should have a lovely sheen.

Ingredients Serves 1

Two eggs

One Tablespoon of cream

25 grams of butter

Salt to taste.

Method

1. Place eggs and cream in a bowl

2. Break yolks and slowly stir around but remember tip one



  1. Cut up half the butter and place in bowl

  1. Place remaining butter in pan and melt

  1. Place egg mixture in pan and slowly move around until cooked. Remember they are scrambled eggs, not omelets.

​6. Place on Toast and lightly salt.
