Best Bolognese ever
The Best Bolognese EVER! Controversy from the start. Is this a bolognese or a ragu? Don’t care this is the best of both! My pet hate is how we have tried to speed up the process of cooking delicious dishes. The modern family takes meat browns it adds a jar of dolmio and there you go. This is the equivalent of a big mac of Italian cooking. This ragu/bolognese takes half a day to cook but the flavours are amazing. It also is full of hidden veggies for the kids. Spend a Sunday arvo cooking a big batch of this and you will not only have sauce for bolognese but also it makes a great base for lasagne. You will get two or three family dinners out of this batch!
Ingredients
750 grams of meat (beef or for something different Turkey mince)
3 carrots diced
4 celery stalks diced
1 large onion diced
125 gram of bacon diced
125 ml of dry white wine
750 ml of chicken stock
800 grams of crushed tomatoes
2 tablespoon of tomato paste
125 ml of cream.
150 ml olive oil
Method
Place olive oil in large pot, heat and place in carrots, celery and onion. Cook until onion becomes translucent
Stir in bacon
Place meat in cook until browned
Cover with white wine, reduce until wine has evaporated
Take third of stock cover meat mixture, reduce. Repeat with remaining stock.
Place in tomatoes, slowly simmer for 3 hours
Last five minutes stir in tomato paste and cream.
Season.
